Summer Greens

Can you guess the name of this bird in the comments below? I guess it was a woodpecker, not really sure! 🙂

Say hello to my friend, I met today morning in the park!

Summer is here, and I am thoroughly enjoying soaking up the vitamin D in the morning sunshine with abundant greens around me. I have tried to incorporate some greens into my diet in the form of smoothies and I am so excited to share some of the recipes I have tried and enjoyed. I am an amateur photographer and a novice at food blogging, so feel free to drop in me your suggestions.

Today I tried an avocado chia smoothie, which wasn’t just healthy but also so delicious and creamy. As a throwback, I recollect buying a green avocado for the first time and trying to make a milkshake for myself with one full avocado 😛 Oh boy, what a disaster it turned out! Firstly, a “green” avocado is unripe, so it simply wouldn’t taste good or be ready to be consumed. Secondly, avocados are extremely creamy in texture so using 1 full avocado for making a 1 person milkshake was way too thick. Ideally, if you use half an avocado, you need to add some water too, along with your milk to bring it to an ideal consistency to make a two-person drink (this is something I follow out of my own experience).

Oddly enough, I feel that learning from our own mistakes is such a fulfilling thing as one never tends to forget the lessons learned 😉 Just to save you from the mistake of buying un-ripe avocados, refer the below picture:

One interesting tip which I recently tried and tested – if you shop for a green avo, worry not. To ripen your green avocado, place it next to an apple and or banana and cover it with some kitchen towels for 3-4 days and you will have your deliciously ripe avo (I felt it tasted better this way) 🙂

Without further adieu, let’s kickstart our recipe:

Ingredients for a one person smoothie:

  1. 1/4 of a ripe avocado scooped out from the skin
  2. 1/2 of a banana cut into small chunks (try frozen bananas, as they have a great texture)
  3. 2 tablespoons of chia seeds soaked overnight in 100 ml water (chia seeds are the ultimate ‘superfoods’ to include in your daily diet)
  4. 100 ml low-fat milk (cow milk or any vegan milk)
  5. Some ice cubes (skip if using a frozen banana)

Making of the green smoothie:

Add all the ingredients to your blender/ Nutribullet bowl and blend for 1-2 mins. Enjoy fresh and chilled in your favorite tall glass. The smoothie is creamy and thick and quite filling. I think it makes an ideal morning drink for breakfast.

Storing of the unused avocado

I still have 3/4 of the avocado left (with the pit intact) upon which I’ve applied a fine coating of oil and stored in an airtight container in the fridge. I read this hack of storing half avos on the net. I will post an update tomorrow to let you know if it works 😀

Note: I didn’t add any extra sweeteners as the banana added a wonderful sweet flavor to my drink. You may add sugar/honey/maple syrup/stevia/sugar-free as per your taste for extra sweetness.

I clicked a picture of the final output but realized I need to way improve my food-photography skills 😀 I have some more recipes which I tried and enjoyed and I will try to share them with “decent photos” soon 🙂

Let me know in the comments below if you enjoyed reading this post and would like more of these on my blog.

Cheers! Happy weekend xoxo ❤

    • Hello Erika, the hack for saving the unused avocados actually does work. I used the 2nd portion today morning and just washed off with running water to remove off the oil and it was just as I left in the airtight container in my fridge. Do give it a shot. Also, leave the pit/seed intact and just cut off what you need for the use and you’ll be good to go 😊
